Caffe Ibis is a food and drink brand founded in Logan, Utah, in 1976.
For decades, decisions at Caffe Ibis in Logan have run through one question: What would Allen and Alice think? Allen and Alice Stokes were early mentors to the founders. He was a wildlife biologist and she was a community and environmental advocate. They met while working for Aldo Leopold. The company calls it the Allen Test.
Randy Wirth and Sally Sears came to northern Utah for the mountains and Utah State University. In 1976 they bought the Straw Ibis Herb and Grain Company and ran it as a market and cafe. By 1985 they wanted more control over their coffee, so the coffee got a company of its own. It focuses on beans certified organic and Fairtrade that also carry the Smithsonian's Bird Friendly seal for shade grown coffee.
Wirth, the roastmaster, died in 2014, and a covered bike shelter in downtown Logan carries his name. After 44 years Sears sold the company to its longtime CFO, Lesa Wilson, effective January 1, 2020. As Lesa Wilson steps back from daily work, general manager Tom Wilson has added a question of his own. He calls it the Randy Test: What would Randy think?
In 2015 Caffe Ibis roaster Brandon Despain won the US Coffee Championship in his first competition, after booking a flight out of the country for the final day.
