High West now adds rye it distills itself, at a distillery in Wanship. Wikipedia lists American Prairie Bourbon as mostly sourced from MGP, while Double Rye combines MGP rye with High West's own distillate. Rendezvous Rye, the one that started with Indiana and Kentucky whiskey, now includes High West's own younger rye.

The distilling happens at 27649 Old Lincoln Highway in Wanship, where High West also runs tours. When the company sold in 2016, the Park Record4,5 described the Wanship building as a 30,000 square foot distillery and tasting room with space for four whiskey stills, one of them in use. The saloon in Park City came first. It sits in a former livery stable, and converting it ran $1 million over budget.

David Perkins studied biochemistry and worked at Amgen before he founded High West with his wife, Jane, in 2006. He told Food Republic6 that distilling was the same work, except the product is "a drug called ethanol." The company's own timeline calls it Utah's first legal distillery since 1870.

Who owns High West

Constellation Brands. It bought High West for $160 million in October 2016, the Park Record reported, when the distillery was selling about 70,000 cases of whiskey a year. Perkins told the paper then that he expected High West to stay in Park City for years, and the company is still run from there. No other distiller in this group belongs to a large drinks company. Which other Utah whiskey is distilled here

Sugar House Distillery in Salt Lake City makes bourbon from locally grown corn and rum from Grade A molasses. Its history page calls the process grain to glass and adds, "No outsourcing." James Fowler founded it in 2013 after more than 20 years of home brewing.

Outlaw Distillery opened in Midvale in January 2015, started by a diesel mechanic with less than $90,000 of his own money. The company built its own distilling equipment while it waited on permits. It makes a bourbon whiskey and a white whiskey, plus two rums. In 2025 a Tempe, Arizona, distillery called Adventurous Stills was rebranded as Outlaw, and the company now calls Arizona its corporate headquarters. Its own site says the Utah plant focuses on grain to glass production, so Outlaw still distills in Utah even though the company is no longer run from here.

Alpine Distilling in Park City splits the work by color. "Rob makes the whiskey, and I make the gin," Sara Sergent told TownLift12 in 2022, the year its Utah Straight Bourbon Whiskey took platinum at the TAG Global Spirit Awards.

Beehive Distilling is best known for gin, but its newer 450-gallon still has a column for whiskey and vodka. In 2022 CompanyWeek found a rye made with Oaxacan green corn waiting in 20-year-old barrels that had held Mexican sherry, and the bourbon was getting close to three years old.

Where is gin made in Utah

Beehive Distilling opened in Salt Lake City in 2013 as the first gin distillery in Utah in more than a hundred years, according to Visit Salt Lake15. Its Jack Rabbit Gin is meant to smell like the southern Utah desert, and the vapor passes through lemon peel and sage on its way out. The juniper berries come from Albania. The original 80-gallon pot still has only ever made gin, because, as co-founder Matt Aller put it, "We didn't want the flavor to change."

At Alpine, the gin is Sara Sergent's. In 2024 she became the second woman from the United States inducted into the Gin Guild in London, and in 2026 she was a James Beard Award semifinalist in beverage service.

Holystone Distilling was the first distillery in Murray. Its Navy Strength Gin is 114 proof, SLUG Magazine reported when the place opened in 2019, and the owners set out to make the building look like a 1920s cruise ship.

Utah vodka and the stranger bottles

Ogden's Own Distillery started in 2009 with Underground, a spirit distilled from corn and blended with 33 herbs and spices. In May 2020 it opened a 32,000 square foot distillery in Ogden, which Utah Business17,20 called the largest independently owned distillery in the state.

Dented Brick Distillery in South Salt Lake draws its water from an artesian well that, by the company's account, a water witcher found. The bricks that gave the place its name carry bullet dents from a shootout at a well driller's home. It opened in spring 2016 with Antelope Island Rum.

New World Distillery in Eden makes Rabbit and Grass from organic blue agave. Tequila generally has to be distilled in the Mexican state of Jalisco. Chris Cross told Utah Business in 2020 that the federal alcohol bureau had been "in a constant battle with me" over what to call his. The same story said New World was then the only distillery in Utah making agave spirits.

Waterpocket Distillery opened in West Valley City in 2017 as Utah's 13th licensed distilled spirits plant. SLUG Magazine says its Notom is the first amaro distilled in Utah. Not every bottle starts there, though. Utah's Own lists the Robbers Roost whiskey as outsourced.

The Hive Winery & Spirits in Layton is mostly a winery, but Utah State University calls it Utah's first brandy distillery and the smallest commercial still in the state. The distilleries that run tours are in Utah brands you can visit, and every Utah maker of food and drink is on the food and drink page.
