Heber Valley Artisan Cheese is a food and drink brand founded in Midway, Utah, in 2011.
The cows on the Kohler farm in Midway have mattresses and back scratchers, and robots do the milking. Heber Valley Artisan Cheese is made from that milk. The Kohlers have owned the farm since 1929, and Grant Kohler grew up in a valley full of dairies. "We've gone from over 100 dairies to two," he told CompanyWeek in 2016.
The usual fix in dairy is to get bigger. That takes expensive land, and leaving for somewhere cheaper was not an option. "Our roots are really deep here," Kohler said. So in 2011 the family built a creamery on the farm and started turning its own milk into cheese. He thought he was heading into new territory until he found out his family had made cheese generations ago.
"Most cheesemakers have to buy their milk," Kohler said. The family switched its cows from corn to grass, and he described the farm as "about organic as you can get without being verified," so it is not certified organic. The lineup includes juustoleipa, a Finnish bread cheese. Farm tours run daily at 11, in a valley that went from more than 100 dairies to two. This is one of them.
In 2019 the cheese cave at Kohler Creamery in Midway held 85,000 pounds of cheese, according to Fox 13.
